Every wife knows that the best way to a man’s heart is through his stomach. Conquer his appetite and he’s yours forever–sort of like an experiment in mind control. She wanted to make BLT bites for her friend’s party on Saturday, but we were delayed with a yard sale. So the scrumptious appetizer made its appearance at a family gathering on Sunday. . . but not before I was allowed to try one.
What you’ll need: 30-35 cherry tomatoes; 1 lb. bacon, cooked and chopped very fine; 4 green onions, chopped; 1 cup mayo; 6 tbsp. Parmesan cheese; Fresh parsley
1. Slice the tops of the cherry tomatoes and scoop out the flesh with a melon baller. (God, what a hilarious term. Surgeon: “Nurse, I’ll need a scalpel, a 10-gauge syringe, one pint of plasma and a mellon baller.”)
2. Combine mayo, onions, bacon, and parmesan cheese. Fill cherry tomatoes.
3. Refrigerate for at least 1 hour.
4. Sprinkle with fresh parsley before serving.
Suffice to say, her plate of BLT bites returned empty from the family gathering. I was allowed to use some of her mixture in a lunch wrap–my new favorite. Have you ever seen a happier appetizer?
